The mechanical dishwasher was checked with the inspector's thermometer and is working at optimum temperature. A bottle of hand sanitizer stored above clean plates in the wait station. The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Black static dust on the fan blades of the ceiling fans.
